Curry Potatoes in Tomato Sauce

Ingredients

  • 4 medium size potatoes
  • 8 shallots
  • 1 bulb garlic
  • 2 inch ginger
  • 1/2 tsp mustard seeds
  • 2 dried chillies
  • 10 curry leaves
  • 2 green / red chillies
  • 1 tsp chili powder
  • 1 tsp coriander powder
  • 1/2 tsp cumin powder
  • 1/4 turmeric powder
  • 1 tsp of salt
  • 1 1/2 tbsp ghee
  • 3 medium size tomatoes
  • 1 tsp of sugar
  • Chicken stocks cube (It’s healthier to omit this and replace with blend ikan bilis instead although chicken stocks taste much better)

Method

  1. Heat cooking oil in a wok
  2. Add in mustard seeds
  3. Add in the rest of the ingredients
  4. Cover lid and cook for 30-40 mins
