Sambal Tumis Recipe (Sweet sambal recipe)

This is a sweet sambal recipe. Here’s the ingredients:

Ingredients

To blend all ingredients (A)

(A)

  • 100gm dried chillies (cili kering – boil in hot water to soften and cut into small pieces for easy blend)
  • 100gm red chillies
  • 10gm bird eye (cili padi)
  • 250gm shallot (bawang kecil)
  • 1 big onion (bawang merah besar)
  • 10gm ginger (halia)
  • 15gm galangal (blue ginger)
  • 30gm garlic (bawang putih)
(B)
  • 15gm belacan (shrimp paste to be roasted)
  • 3/4 cup of lard / cooking oil
  • 40gm tamarind pulp (Air asam jawa)
  • Water
  • 50gm palm sugar (gula melaka)
  • 1 tsp salt (garam)
  • 100ml santan

Method

  1. In a wok, dry toast belacan till aromatic
  2. Pour in blended ingredients (A),
  3. Add cooking oil. (i omitted cooking oil for health reason, and i substitute with santan)
  4. Put in santan tamarind juice, water, palm sugar, salt. Always sieve your tamarind juice first before pouring into paste.
  5. Stir for 30-40 mins
  6. Leave it cool and store into fridge or freezer.
