For Siew Yoke recipe, i follow Wendyinkk’s recipe http://wendyinkk.blogspot.com/2010/12/chinese-roasted-pork.html To prevent oil from sticking to my tray, i use aluminium foil underneath. It’s easier to clean as well. Just throw after finish.
To poke use an awl tool easier.
Next time buy pork with layer skin, because this thick layer of fats will hardened once it’s cooked into siew yoke!. Must choose skins with thin layer skin then only it’ll turn crispy and chewable.
